Perfect Summertime Dinner

Preston and I tend to be pretty terrible about cooking together. We're getting better about eating together at the table like adults, but usually just one of us cooks. Last night, however, BOTH of us cooked. As in, we were in the kitchen AT THE SAME TIME. Monumental indeed.

I sauteed zucchini, squash, garlic and baby portabellas before mixing them with spaghetti, olive oil, and a whole lot of freshly grated parmesan (I have a cheese addiction problem). Pres picked up some corn at the market earlier in the day, which was orgasmically good and makes me wish it were summer all the time if only for the food.

So we put everything on the table, I sliced a fresh tomato, Pres opened a bottle of wine, and we dug in. It was definitely the most seasonal meal we've cooked this summer, and man could I tell. Everything tasted really fresh and flavorful. Granted, by the time we actually ate I was hungry enough to eat a small mountain of food, but still. Everything really was delicious. Originally, for dessert, I planned on making this really yummy toffee cheescake that I've been eyeing for a while, but then I decided I would rather not spend eighty hours in the kitchen. Sooo since Preston tends to like little kid food, I opted for one of my favorite summertime desserts from when I was little: Oreo pie (which, frankly, is still just as yummy as when I was ten and soooo easy to make--24 crushed Oreos and half a stick of butter for the crust, a quart of ice cream-I used coffee-for the filling and shaved chocolate on the top).

After dinner, we were pretty full, so we decided to wait on dessert. In typical Mary Frances fashion, however, I fell asleep early and missed out on the pie. But Preston tells me it was delicious.
